a plant-based diet. A Finnish startup, Solar Foods, is producing protein, carbohydrates and fat from air, sunlight, and a little water and minerals, with the help of grazing bacteria—and no plants or animals at all. (The new electric food would be used as
the base for processed products probably using plants.) George Monbiot believes Solar Foods has the potential to reverse the losses of the previous item and the heating of the succeeding one. He does not address its taste, though that is probably manageable.
